Meal Plan Greek Chicken Quinoa Bowl Recipe

Servings: 4

Ingredients:

For the Quinoa Base:

  • 1 cup quinoa, rinsed
  • 2 cups water or chicken broth
  • 1/2 teaspoon salt

For the Chicken:

  • 1 pound boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

For the Toppings:

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup Kalamata olives, sliced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1 cup store-bought tzatziki sauce

Instructions:

  1. Prepare the Quinoa.
  2. In a medium pot, bring water or chicken broth to a boil.
  3. Add the quinoa and salt. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the liquid is absorbed. Fluff with a fork and set aside.
  4. Cook the Chicken.
  5. Pat the chicken dry and season both sides with salt, pepper, and Italian seasoning.
  6. Heat a skillet over medium-high heat and add olive oil.
  7. Cook the chicken for 4-6 minutes per side, or until golden and cooked through (internal temperature of 165°F). Let rest for 5 minutes before slicing.
  8. Assemble the Bowl.
  9. Divide the quinoa among four bowls.
  10. Top each bowl with sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta.
  11. Add a dollop of store-bought tzatziki sauce and garnish with fresh parsley.
